- 1 cup sugar
- 1 large egg
- 1 cup whole wheat flour
- 1 cup flour
- 1 1/2 tsps baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 2/3 cup mashed banana
- 1 1/4 cups chopped cranberries
- 1/2 cup chopped walnuts
Instructions
- Pre-heat oven to 350 °F (175 °C).
- Mix sugar and butter, then add egg and beat together.

- Mix in mashed banana (old bananas work best), cranberries and nuts.
- Put lumpy and sticky dough into 16 muffin cups and bake for 25-27 minutes until toothpick inserted comes out clean.
