Ingredients

4 tbsps butter 1 cup sugar 1 large egg 1 cup whole wheat flour 1 cup flour 1 1/2 tsps baking powder 1 tsp salt 1/2 tsp baking soda 2/3 cup mashed banana 1 1/4 cups chopped cranberries 1/2 cup chopped walnuts

Instructions

1. Pre-heat oven to 350 °F (175 °C). 2. Mix sugar and butter, then add egg and beat together. 3. Add flour, baking soda, salt, baking powder and mix. 4. Mix in mashed banana (old bananas work best), cranberries and nuts. 5. Put lumpy and sticky dough into 16 muffin cups and bake for 25-27 minutes until toothpick inserted comes out clean.
