A layer of Birthday Cake Oreos creates a slightly crunchy crust to these brownies—and means you never have to choose between your favorite desserts. With this recipe, you can have them ALL.
Ingredients
2 package Birthday Cake Oreos, either chocolate, vanilla, or one of each
1 stick unsalted butter, plus more for greasing
2 c. semisweet chocolate chips
3/4 c. granulated sugar
3/4 c. brown sugar
4 eggs
2 tsp. vanilla extract
1 tsp. salt
1 1/2 c. "birthday cake" cake mix, such as Funfetti, divided
2 c. rainbow sprinkles, divided
1 TK oz. container store-bought vanilla frosting
Instructions
Preheat the oven to 325 degrees F. Grease a 9-by-13-inch pan and line with parchment paper. Line bottom of pan with Birthday Cake Oreos, alternating chocolate and vanilla.
Melt chocolate chips and butter in a medium saucepan over low heat, stirring constantly. Remove from the heat, and whisk in the sugars. Allow to cool further. Whisk in the eggs, one at a time, and then the vanilla. Stir in 1 cup of the cake mix, the salt, and 1 cup of sprinkles.
Spread in the pan on top of the Oreos, and bake for 45 minutes, until brownies are set in the center and a toothpick comes out clean. Let cool.
Meanwhile, empty frosting into another medium bowl, and stir in the remaining 1/2 cup of cake mix.
When brownie bars are cool, spread frosting on top, and cover with remaining rainbow sprinkles. Cut into squares.
