Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. 3 large eggs
1/2 tsp cinnamon
1 tsp peanut oil
4 small apples
3/4 cup sugar
1 cup flour
1. Grease a pan with oil, use a little flour to flour the pan. Pre-heat oven to 350 °F (175 °C).
2. Core, quarter and slice apples fairly thinly (1/4-1/8"). Arrange about 2/3 of the slices on the bottom of the pan.
3. Beat the eggs with the sugar using a wooden spoon or a spatula. When well incorporated, stir in the flour. Batter will be thick. You can add a dash of cinnamon.
4. Pour about 1/2 the batter over the apples, spread to cover them all.
5. Arrange 1/2 of remaining apple slices on the batter.
6. Cover with remaining batter, spreading over.
7. Top with remaining slices. Bake for about 25 minutes.
