Roast Beef Lettuce Wraps - PCOS-Friendly Recipe

Ingredients
- 1/4 c. rice vinegar
- 1 tbsp. honey
- Kosher salt and pepper
- 1 large shallot
- 1 tbsp. finely grated ginger
- 1 head Boston or Bibb lettuce
- 3/4 lb. thinly sliced roast beef
- 2 plums
- 1 small seedless cucumber
- 1 large carrot
- 1/2 c. fresh mint leaves
Instructions
- In a small bowl, whisk together the vinegar, honey, 1/2 tsp salt and 1/4 tsp pepper; stir in the shallot and ginger.
- Fill the lettuce leaves with the roast beef, plums, cucumber, carrot and mint. Serve with the vinaigrette for drizzling.
