  • 1/4 c. rice vinegar
  • 1 tbsp. honey
  • Kosher salt and pepper
  • 1 large shallot
  • 1 tbsp. finely grated ginger
  • 1 head Boston or Bibb lettuce
  • 3/4 lb. thinly sliced roast beef
  • 2 plums
  • 1 small seedless cucumber
  • 1 large carrot
  • 1/2 c. fresh mint leaves

Instructions

  1. In a small bowl, whisk together the vinegar, honey, 1/2 tsp salt and 1/4 tsp pepper; stir in the shallot and ginger.
  2. Fill the lettuce leaves with the roast beef, plums, cucumber, carrot and mint. Serve with the vinaigrette for drizzling.
