Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Lemons are also rich in vitamin C, flavonoids, and other antioxidants. They can potentially support the immune system and have other health benefits. Lemons also have a low glycemic index, so they should not cause a rapid rise in blood sugar when consumed in natural form.
1 tbsp. thinly sliced lemon zest
2 tbsp. fresh lemon juice
2 tbsp. olive oil
1 lb. chicken cutlets
1 zucchini
1/4 red onion
salt
Pepper
1 handful chopped toasted almonds
1 handful fresh parsley
1 loaf Italian bread
romaine lettuce
Slice 1 zucchini into ribbons with a vegetable peeler. Combine with red onion, thinly sliced lemon zest, fresh lemon juice, and olive oil. Season with salt and pepper and let stand 30 minutes.
Meanwhile, season chicken cutlets with salt and pepper and broil until cooked through. Let cool, then shred and add to marinated zucchini along with a handful of chopped toasted almonds and fresh parsley. Cut Italian bread in half horizontally and hollow out.
