Ingredients

  • 1 15-oz. can chili con carne
  • 1 large onion, diced
  • 1 c. shredded Mexican cheese
  • 8 oz. cream cheese
  • 1/3 c. lager beer
  • Few dashes hot sauce
  • kosher salt
  • 12 oz. Macaroni
  • sour cream, for garnish
  • Fresh cilantro, for garnish (optional)
  • Tortilla chips, for serving

Instructions

  1. In a small slow-cooker, combine chili, onion, cheese, cream cheese, beer, and hot sauce and heat, covered, on high, 1 hour.
  2. Meanwhile, bring a large pot of water to a boil. Season generously with salt and add macaroni. Cook until al dente, 2 minutes, then drain.
  3. When ready to serve dip, add macaroni and stir until combined.
  4. Garnish with sour cream and cilantro (if using) and serve with tortilla chips.
