Ingredients

  • 3 c. cornflakes
  • 1 tbsp. honey
  • 1/2 tsp. finely grated lemon peel
  • 1/2 tsp. salt
  • 1/4 tsp. Pepper
  • 1 lb. chicken tenders
  • 1 tbsp. Dijon mustard

Instructions

  1. Preheat oven to 450 degrees F.
  2. Place wire rack in large jelly-roll pan. In pie plate, crush cornflakes with honey, lemon peel, salt, and pepper until blended.
  3. Coat chicken tenders with Dijon mustard. Dredge each in cornflake mixture.
  4. Place on rack; bake 12 minutes or until chicken is no longer pink in center.
