材料:
1. 春卷皮 10塊
2. 150克= 5.2 oz 火雞胸肉
半煲水放些鹽,雞粉,水沸後放入肉,中火煮 13分後,取出攤凍,手撕肉,加入 1茶匙鹽,少許胡椒粉和 3湯匙白酒,醃幾分鐘
3. 1 粒蒜頭去皮切開
4. 30 只大蝦仁,洗淨去水,加入少許糖, 1茶匙鹽,酒,豆粉醃 10分鐘
5. 250 克= 8.8 oz 新鮮芽菜,洗淨去水
6. 1 湯匙薑碎
7. 1 個小紅蘿蔔,去皮切絲
8. 冬姑 4個,洗淨,浸軟切絲
9. 20 克=0.7 oz 粉絲,洗淨,浸軟切手指尾一節長
10. 芫茜,蔥切粒,隨多少
做:
1. 燒熱pan放些油,爆蒜頭,加入芽菜炒熟,加入少許糖, 胡椒粉,1茶匙鹽和取出蒜頭,倒出濾
2. 燒熱pan放油,爆薑碎,加入蝦仁炒熟,加入紅蘿蔔,冬姑,火鷂肉,加入調味獻, 1湯匙醬油,白酒,鷂精,鹽和少許糖炒勻,加入粉絲和芽菜炒混和,最後加入 3茶匙豆粉獻,試味, 放濾器,攤凍,面放芫茜蔥,做時混合
包春卷:
春卷皮分滑是面和底,底放餡,卷皮,糊口( 2湯匙麵粉加些水,弄戍糊狀),焗盆放焗油紙,放上巳包好春卷棑開
焗爐170° C= 338° F, 先熱 10分,放焗盆在中間層
焗兩邊啡色就可以, 我的爐焗面 20分後,返轉底向面又焗 20分

Ingredients:

Filling for 10 spring rolls
1. 150 gram= 5.2 oz turkey breast
half pot of water, add some salt and chicken essence in and boil, put in turkey breast to cook , middle heat for 13 minutes, leave to chill. use the fingers to make the meat small, add 1tsp salt, pinch of pepper and 3 soup spoons white wine , for few mintues
2. 1 garlic, cut 2 pieces
3. 30 shrimps, washed and drained, add pinch of sugar, 1 tsp salt, wine, some lemon juice and corn starch marinate for 10 mintues
4. 250 gram= 8.8 oz fresh soy bean sprouts, rinsed and drained
5. 1 soup spoon fine chopped ginger
6. 1 small carrot, sliced
7. 4 middle sized chinese mushrooms, wash, soak and shred
8. 20 gram= 0.7 oz glass noodles,soak it 15 minutes in water
9. some parsley and chive, cut it small
Method:
1. heat up pan, add oil, put garlic in for 2 minutes,
pour in soy bean sprouts stir it well, take out garlic, add pinch of sugar, pepper,1 tsp salt
2. heat pan til hot put some oil in, put in ginger, shrimps stir it til done, put in carrot , mushrooms and turkey meat stir it together, put in1 soup spoon soy sauce, white wine, salt, chicken essence and pinch of sugar stir it a while, add in glass noodles, and soy bean sprouts, thicken with 3 tsp corn starch lotion
put the mixture in a sieve, mit parsley and chive on top and leave aside to chill
spring roll wrappers have a top and bottom side, the smooth side is top,
mix the filling with parsley and chive, then put the filling on bottom side
2 soup spoons flour mix some water, to glue the edge of the wrappers
oven on 170° C = 338° F for 10 minutes
put parchment paper on the bake plate, put spring rolls put on top, til the spring rolls turn brown on both side, I baked each side 20 minutes
To serve with:
1. Thai sweet chili sauce for chicken
2. tomato ketchup and chili sauce
