Ingredients

4 eggs (US) / 4 eggs (metric), 1/2 cup roasted red peppers (US) / 120 ml roasted red peppers (metric), 1/4 cup goat cheese (US) / 60 ml goat cheese (metric), 1 tbsp olive oil (US) / 15 ml olive oil (metric), Salt and pepper to taste

Instructions

1. Preheat the oven to 375°F (190°C). 2. In a bowl, whisk the eggs and add salt and pepper. 3. In an oven-safe skillet, heat the olive oil over medium heat. 4. Add the roasted red peppers to the skillet and sauté for 2 minutes. 5. Pour the egg mixture over the peppers. 6. Crumble the goat cheese on top. 7. Transfer the skillet to the oven and bake for 15-20 minutes or until the eggs are set. 8. Let it cool for a few minutes before serving.
