Ingredients
- 1 large cucumber (peeled and chopped, about 2 cups)
- 1 ripe avocado (peeled and pitted)
- 1/2 cup fresh cilantro
- 1/4 cup fresh lime juice
- 1/4 cup red onion (chopped)
- 1 clove garlic (minced)
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 cup cold water
Instructions
- Combine all ingredients in a blender.
- Blend until smooth.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with additional cucumber slices and cilantro if desired.
