Ingredients

1/2 cup (120ml) honey, 1/4 cup (60ml) coconut oil, 1 tsp (5ml) vanilla extract, 2 cups (480ml) rolled oats, 1/2 cup (120ml) psyllium husk, 1/4 cup (60ml) flax seeds, 1/4 cup (60ml) pumpkin seeds, 1/4 cup (60ml) dried cranberries, 1/4 cup (60ml) sliced almonds

Instructions

1. Preheat oven to 350F (175C). 2. In a saucepan, heat honey and coconut oil until melted. Remove from heat and stir in vanilla extract. 3. In a large bowl, combine oats, psyllium husk, flax seeds, pumpkin seeds, cranberries, and almonds. 4. Pour honey mixture over oat mixture and stir until well coated. 5. Spread granola on a baking sheet and bake for 20-25 minutes, stirring occasionally, until golden brown. 6. Let cool completely before storing in an airtight container.
