1 cup almond flour (US) or 120g (metric), 2 large eggs, 1 cup spinach (US) or 30g (metric), 1/2 cup diced bell peppers (US) or 75g (metric), 1/4 cup diced onions (US) or 40g (metric), 1/2 cup shredded cheese (US) or 50g (metric), 1/2 tsp salt, 1/4 tsp black pepper

Instructions

1. Preheat your oven to 350°F (175°C). 2. In a bowl, mix almond flour with salt and pepper. 3. Press the mixture into a pie dish to form a crust. 4. Bake the crust for 10 minutes. 5. In another bowl, whisk the eggs. 6. Add spinach, bell peppers, onions, and cheese to the eggs. 7. Pour the mixture into the pre-baked crust. 8. Bake for 20 minutes or until the quiche is set. 9. Let it cool before serving.
