Ingredients

  • 1/4 Dijon mustard
  • 1 tablespoon pressed garlic
  • 1 pound turkey tenders (99% fat-free)
  • 1 1/2 cups chopped tomato
  • 2/3 cup chopped orange segments
  • 1/2 cup chopped red onion
  • 3 tablespoons chopped fresh parsley
  • 2 tablespoons orange juice
  • 2 tablespoons drained capers

Instructions

  1. Combine mustard and garlic in large bowl. Add turkey and turn to coat. Let stand approximately 45 minutes or less
  2. Combine next 6 ingredients in medium bowl. Season to taste with salt and pepper.;(Can be prepared up to 2 hours ahead. Cover.)
  3. Preheat oven to 450 °F. Line baking sheet with foil. Transfer turkey to prepared baking sheet. Pat on all remaining mustard mixture. Bake until cooked through, about 20 minutes. Let stand 5 minutes. Cut into thin slices. Transfer to plates and top with tomato compote.
