Ingredients
- 1 lemon
- 1 bag broccoli florets
- 2 tbsp. water
- 1 tsp. olive oil
- 1 clove garlic
- 1 slice firm white bread
- 1/4 tsp. salt
- 2 tbsp. chopped fresh parsley leaves
Instructions
- From lemon, grate 1/2 teaspoon peel and squeeze 1 tablespoon juice.
- In microwave-safe bowl, place broccoli and water. Cover with vented plastic wrap and cook in microwave on High 4 to 5 minutes or until tender-crisp.
- Meanwhile, in small skillet, heat oil on medium-high. Add garlic and cook 30 seconds. Stir in lemon peel, bread crumbs, and salt and toss to combine; remove skillet from heat and stir in parsley.
- Drain broccoli if necessary; transfer to serving bowl and toss with lemon juice. Sprinkle crumb mixture over broccoli to serve.
