A simple sauce with cheese and chicken.
Ingredients
8 oz skim mozzarella cheese, grated
2 cups milk, lowfat
3 tbsps butter
2 tbsps parmesan cheese, shredded
1 1/2 breasts, bone and skin removed grilled chicken breast
2 tbsp flour
Instructions
1. Melt the butter on low to medium heat.
2. When the butter is completely melted, add the flour and make sure there are no lumps.
3. Add the milk and let it come to a boil at low heat. Stir often.
4. Chop the chicken to small bite size pieces.
5. Add the mozzarella and let it melt, keep on a low heat until the cheese is no longer "stringy".
6. Add the chopped chicken and the parmesan cheese, and stir it in.
7. Serve with pasta and a salad.
