  • 3 pounds real baby carrots or regular carrots (rainbow if you can find them) cut into matchsticks
  • 1/4 cup olive oil
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons cumin
  • Pinch chili powder
  • Kosher salt

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a bowl, mix together the olive oil, brown sugar, cumin and chili powder; season with salt. Toss the carrots in the flavored oil, then spread them out on a parchment- or foil-lined baking sheet. Bake until browned and tender, 30 minutes to 1 hour
