Leek, Broccoli & Cauliflower Soup - PCOS-Friendly Recipe

Ingredients
- 2 tbsps olive oil
- 1/2 cup sour cream
- 1/2 cup 1% milk
- 3 tbsps butter
- 4 cups chicken broth
- 2 cups chopped broccoli
- 1 cup chopped carrots
- 2 cups cauliflower
- 3 cloves garlic
- 2 leek
- 1 cup pieces or slices mushrooms
- 1/3 cup green peas
- 2 cups water
Instructions
- Clean all vegetables and slice leeks into 1" to 1/2" pieces. Chop broccoli and cauliflower. Finely chop garlic cloves.
- Heat olive oil and butter in a large stock pot, then saute leeks, garlic, broccoli, cauliflower and carrots for 10 minutes.
- Add chicken (or vegetable) broth, plus 2 cups of water to the pot.
- Add 1/2 cup each of sour cream and 1% milk. Puree soup with a blender or mixer and salt and pepper to taste. Enjoy!!!
- Bring to a boil, then simmer for 45 minutes.
