  • Creamy Grits
  • 3/4 c. quick-cooking grits
  • 1/4 tsp. salt
  • 3 c. water
  • 1 tub spreadable light garlic and fine herbs cheese (such as Boursin light)
  • Greens
  • 1 bag leafy greens blend (in microwave bag)
  • 1 tsp. olive oil
  • .13 tsp. each salt and crushed red pepper
  • Cajun Shrimp
  • 2 tsp. olive oil
  • 1 lb. large (21 to 30) thawed, frozen
  • 1 tsp. Cajun seasoning

Instructions

  1. Cook grits and salt in water as package directs. Remove from heat, stir in cheese, cover and set aside.
  2. Place ingredients in a large microwave-safe bowl. Cover with vented plastic wrap and microwave on high 3 minutes or until greens are tender. Toss; cover and set aside.
