Ingredients
- 1/2 stick butter, softened
- 1/3 c. brown sugar
- 8 oz. cream cheese, softened
- 1 tsp. vanilla extract
- pinch of kosher salt
- 1/2 c. powdered sugar
- 1/2 c. mini chocolate chips
- 1 pt. vanilla ice cream softened
- 8 sugar ice cream cones
- 1 c. chocolate chips
- 2 tbsp. coconut oil
- Rainbow sprinkles, for serving
Instructions
- In a medium bowl, combine butter, brown sugar, powdered sugar, cream cheese, vanilla, salt and chocolate chips. Stir until the mixture is smooth. Scoop about 1/4 c. rounds of dough. Freeze for 1/2 hour, or until the cookie dough is firm.
- Meanwhile, fill ice cream cones with softened ice cream and level off the top of the cone with a butter knife or spatula. Freeze for 1/2 hour, or until the ice cream is firm.
- Make magic shell. Set up a double boiler: Bring a saucepan of water to a simmer. Add a glass bowl and add chocolate. Stir until melted, then stir in coconut oil. Remove from heat and let cool to room temperature.
- To assemble drumsticks, top cones with cookie dough round, pour magic shell over cookie dough and garnish with sprinkles. Serve immediately.
