A classic fruit-crumble topping increases the dessert appeal of this moist dried plum and apple quick bread (pictured, top right).
Ingredients
Basic Quick Bread Dough
3/4 c. sugar
1 tbsp. sugar
1 large Granny Smith apple
3/4 c. pitted chopped dried plums
1 tsp. ground cinnamon
3/4 c. granola
2 tbsp. unsalted butter
2 tbsp. all-purpose flour
Instructions
Preheat oven to 350 degrees F. Combine Basic Quick Bread Dough and 3/4 cup sugar, apple, plums, and cinnamon. Transfer to a nonstick 9- by 5-inch loaf pan.
For crumble topping: In a small bowl, combine granola, butter, flour, and remaining 1 tablespoon sugar. Sprinkle over dough.
Bake until a skewer tests clean when inserted into the center, about 1 hour. Remove loaf from pan and let cool on a wire rack.
