Betty demonstrates how to make Guilt-free Cauliflower Breadsticks. These are made with cauliflower, eggs, and mozzarella cheese and are a low -fat, low-calorie substitute for breadsticks made with flour. Guilt-free Cauliflower Breadsticks 1 large head of cauliflower, rinsed and patted dry 2 cloves garlic, minced 2 eggs, well beaten 4 ounces shredded mozzarella cheese ½ teaspoon onion powder coarse sea salt, freshly ground, to taste freshly-ground black peppercorns, to taste cooking oil spray grated Parmesan cheese, as desired for topping freshly-grated Italian Seasoning, as desired for topping Cut cauliflower into chunks and place in a large glass bowl. Cover with plastic wrap. Cook on HIGH in a microwave for about 6 to 8 minutes, testing after each minute, until fork-tender. Place cauliflower into a food processor and blend until it is the texture of mashed potatoes. Add beaten eggs, shredded mozzarella cheese, garlic, onion powder, salt, and pepper. Process until all ingredients are well combined. Spoon mixture into 10-inch by 15-inch by 1-inch baking pan that has been sprayed with cooking oil spray. Pat the mixture until it is compact, about 1/2-inch thick. Sprinkle with grated Parmesan cheese, as desired. Grind Italian Seasoning over top. Bake at 450 degrees (F) for about 20 minutes, until top is beginning to brown. Remove from oven. Let rest until the baked breadsticks are easy to cut and remove from pan. (They will be fragile while hot.) Place breadsticks on a nice serving plate. Serve with Versatile Pizza Sauce (from Betty's Kitchen) or other bottled Italian sauce.
