Bottle gourd Soya Nuggets are very healthy and nutritious snack that can be served as a party snack. Made with a combo of soya nuggets mixed with grated bottle gourd and boiled potatoes, added with few aromatic spices and herbs makes this a great recipe to treat your kids with good food. These well air fried, oil-free nuggets are absolutely crisp from the outside and soft inside. They are tempting and yummy to eat especially with kids who are bit fussy with eating vegetables. http://www.vahrehvah.com/bottle-gourd-soya-nuggets Ingredients: Soya granules, soaked in water – 1 cup Bottle gourd, grated - 2 tbsp Potato, boiled & grated – 1 cup Green chillies, finely chopped - ½ tsp Onion, finely chopped - 1 no Coriander leaves, finely chopped - 1 tbsp Mint leaves, finely chopped - ½ tbsp Turmeric - pinch Chilli pd - 1 tsp Coriander pd - ½ tsp Cumin pd - ¼ tsp Garam masala - pinch Salt - to taste All-purpose flour - 1 tbsp Water - as required Bread crumbs - 2 tbsp Directions: 1. In a mixing bowl, add soya granula (soaked in water for a while and then drain off the water), grated bottle gourd (lauki), boiled and grated potato, green chillies, onions, coriander leaves, mint leaves, turmeric, chilli pd, coriander pd, cumin pd, garam masala pd and salt to taste. 2. Add little bread crumb if you feel the mixture is too moist. 3. Mix all the ingredients well and Shape them into nugget size. 4. Make a thin batter with all-purpose flour and water. 5. Dip the nuggets in the flour batter and then roll over the bread crumbs coating them well and keep aside. 6. Preheat the Philips airfryer at 180 degree for 3 minutes. 7. Drop the nuggets in the tray and air fry first for about 3-4 minutes at 180 degree C. 8. Remove and bast them with very little oil and again re-fry for another 2-3 minutes. 9. Remove and serve them hot with any sauce of your choice.
