1 medium zucchini (about 1 cup/150g), 1/2 cup (125g) fresh or frozen corn, 1/2 cup (60g) cheddar cheese, 1/2 cup (70g) whole wheat flour, 1 egg, 1/4 cup (60ml) milk, 1/4 teaspoon salt, 1/4 teaspoon pepper, 2 tablespoons olive oil
Instructions
1. Grate the zucchini and squeeze out excess moisture. 2. In a bowl, combine zucchini, corn, cheese, flour, egg, milk, salt, and pepper. 3. Heat oil in a pan over medium heat. 4. Scoop spoonfuls of the mixture into the pan and flatten with a spatula. 5. Cook until golden brown, about 3-4 minutes each side. 6. Serve warm.
