1 lb (450g) lean beef, 4 cups (950ml) low-sodium beef broth, 1 onion, 2 cloves garlic, 1 inch (2.5cm) piece ginger, 2 star anise, 1 cinnamon stick, 4 oz (113g) rice noodles, 2 cups (470ml) bean sprouts, 1 lime, Fresh herbs (mint, basil, cilantro), 2 green onions, 1 jalapeno, Hoisin sauce, Sriracha sauce

Instructions

1. Slice beef thinly. 2. In a large pot, simmer broth, onion, garlic, ginger, star anise, and cinnamon for 30 minutes. 3. Strain broth and return to pot. 4. Cook rice noodles according to package instructions. 5. Add beef to broth and cook until no longer pink. 6. Divide noodles, beef, and broth between two bowls. 7. Top with bean sprouts, lime juice, herbs, green onions, jalapeno, and sauces to taste.
