Ingredients

2 medium zucchinis, 1 cup of quinoa, 1 cup of diced tomatoes, 1/2 cup of diced onions, 2 cloves of garlic, 1/2 cup of shredded mozzarella cheese, 1/4 cup of chopped fresh basil, 1 tablespoon of olive oil, salt and pepper to taste

Instructions

1. Preheat the oven to 375°F (190°C). 2. Cut the zucchinis in half lengthwise and scoop out the insides. 3. In a pan, heat the olive oil and sauté the onions and garlic until translucent. 4. Add the quinoa and diced tomatoes, cook until quinoa is done. 5. Stuff the zucchini boats with the quinoa mixture. 6. Top with shredded mozzarella cheese. 7. Bake for 20 minutes or until the cheese is melted and zucchini is tender. 8. Garnish with fresh basil before serving.
