2 chicken breasts (500g), 1 tablespoon of olive oil (15ml), 1 tablespoon of turmeric (6g), 1 tablespoon of ginger (6g), 2 cups of mixed salad greens (60g), 1/2 cup of cherry tomatoes (75g), 1/4 cup of cucumber (40g), 2 tablespoons of lemon juice (30ml), Salt and pepper to taste

Instructions

1. Season the chicken breasts with turmeric, ginger, salt, and pepper. 2. Heat the olive oil in a pan over medium heat. 3. Cook the chicken breasts for 6-7 minutes on each side or until cooked through. 4. Let the chicken rest for a few minutes, then slice it. 5. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and sliced chicken. 6. Drizzle with lemon juice and toss to combine. 7. Serve immediately.
