1 large head of cauliflower (or 4 cups pre-made cauliflower rice), 2 chicken breasts, 1 tablespoon olive oil, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 cup of chopped bell peppers, 1 cup of chopped zucchini, 1/2 cup of chopped onions

Instructions

1. Preheat your oven to 375°F (190°C). 2. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. 3. Heat the olive oil in a pan over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side, or until cooked through. 4. While the chicken is cooking, chop the cauliflower into florets and pulse in a food processor until it resembles rice. 5. In a separate pan, sauté the cauliflower rice, bell peppers, zucchini, and onions for 5-7 minutes, or until tender. 6. Once the chicken is cooked, let it rest for a few minutes before slicing. 7. Divide the cauliflower rice and vegetables between two bowls, top with sliced chicken, and serve.
