Ingredients

1 cup dried lentils, rinsed 4 cups vegetable broth 1 cup diced tomatoes 2 cups fresh spinach 1/2 cup diced carrots 1/2 cup diced celery 1/4 cup diced onions 2 cloves garlic, minced 1 tbsp olive oil 1 tsp ground cumin 1 tsp turmeric Salt and pepper to taste

Instructions

1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onions, and sauté until fragrant and translucent. 2. Add the diced carrots and celery, and cook for another 5 minutes until they begin to soften. 3. Stir in the rinsed lentils, diced tomatoes, vegetable broth, ground cumin, and turmeric. 4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender. 5. Add the fresh spinach and cook for an additional 5 minutes, until the spinach is wilted. 6. Season with salt and pepper to taste. 7. Serve hot and enjoy.
