- 2 boneless top loin beef steaks (1 1/2 pounds total)
- 1/4 tsp. salt

- 1 medium red pepper
- 1 medium onion
- 1 can diced tomatoes
- Lightly dressed greens
Instructions
- In 12-inch skillet, heat 1 tablespoon olive oil on high. Season top loin beef steaks with 1/4 teaspoon salt. Cook steaks 3 minutes per side or until browned; transfer to plate. Reduce heat to medium. Into skillet, stir red pepper, onion, diced tomatoes, and 1/8 teaspoon salt. Cover; cook 5 minutes. Return steaks to pan. Cook, uncovered, 3 to 5 minutes for medium-rare, or as desired. Slice steaks; serve over lightly dressed greens.
