Ingredients
- 6 slices uncooked bacon, chopped
- 1 1/2 lb red potatoes, unpeeled and diced
- 1 package (1 oz) ranch dressing and seasoning mix
Instructions
- Heat oven to 400 ° F. Position rack in center of oven.
- In 10-inch ovenproof skillet, cook 6 slices chopped bacon over medium to medium-high heat about 5 minutes or until crispy. Use slotted spoon to transfer bacon to paper towel-lined plate. Drain all except about 2 tablespoons drippings from skillet.
- Add 1 1/2 lb diced unpeeled red potatoes to skillet; toss to coat with drippings. Sprinkle in 1 package (1 oz) ranch dressing and seasoning mix; toss again to evenly coat. Return bacon to skillet; toss.
- Bake 35 minutes, tossing every 10 minutes.
