Ingredients
- 1/3 cup balsamic vinegar
- 1 tablespoon light brown sugar
- 1/8 teaspoon freshly ground black pepper
- Canola oil, for brushing
- 8 ounces smoked pancetta, sliced 1/8-inch thick
Instructions
- Preheat the oven to 400 degrees F.
- Whisk together the vinegar, sugar and pepper in a small saucepan until smooth, bring to a simmer over medium heat, and simmer until slightly thickened, about 3 minutes.
- Brush some canola on a baking sheet. Lay the pancetta out in single layer bake in the oven for 5 minutes. Turn the pancetta over, brush with the balsamic mixture, and return to the oven to continue baking until golden brown and crisp, about 10 minutes longer. Remove to a platter.
