Ingredients
- 10 pounds chicken wings
- 4 ounces your favorite dry rub
Instructions
- Preheat a smoker to 250 degrees F. Wash the wings under cold water, and then shake the dry rub onto the wings. Smoke the wings for 3 hours. For the sauce: Mix together the mayonnaise, vinegar, apple juice, lemon juice, black pepper, salt and cayenne. Preheat oil in a deep pan or deep-fryer to 350 degrees F. Fry the wings for 3 minutes per batch, and then remove with a slotted spoon or tongs. Toss the wings in the sauce to coat thoroughly.
