Recipe by Lindsay Funston Use up the first apples you can get your hands on in this oatmeal raisin cookie-apple combo, topped with a scoop of vanilla ice cream and caramel.

Ingredients

  • 10 oatmeal cookies, crumbled
  • 4-5 apples, diced
  • 1 tsp. cinnamon
  • 4 scoops vanilla ice cream
  • Caramel, for drizzling

Instructions

  1. Make apple layer: In a medium saucepan over low heat, combine apples and cinnamon and cook until soft, about 10 minutes.
  2. Among four mason jars, layer oatmeal cookies and apples, alternating until you reach the top of the jar.
  3. Top with a scoop of vanilla ice cream and drizzle with caramel.
