Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 eggs, separated
  • 2 1/2 cups milk
  • 2 teaspoons vanilla
  • 3 tablespoons vegetable oil
  • 2 tablespoons white sugar

Instructions

  1. Preheat a lightly greased waffle iron.
  2. In a large bowl, mix flour, cornstarch, baking powder, and salt.
  3. In a medium bowl, beat together egg yolks, milk, vanilla, and vegetable oil. Blend into the flour mixture to form a batter.
  4. In a medium bowl, whip egg whites with sugar until soft peaks form. Fold into the batter.
  5. Spray waffle iron with non-stick cooking spray, or lightly brush with oil. Ladle the batter onto preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.
