Ingredients

  • 6 cups packaged broccoli slaw
  • 4 cups chopped Granny Smith apple (about 4 small)
  • 4 cups chopped or shredded skinless, boneless white breast meat from a rotisserie chicken (or 3/4 cups dark meat per cup)
  • 1 cup halved seedless grapes
  • 3/4 cup plain nonfat yogurt
  • 1/4 cup crumbled blue cheese
  • 1/4 cup lemon juice
  • 1/4 cup walnuts, chopped
  • Freshly ground black pepper
  • 8 cups mixed greens

Instructions

  1. In a large bowl, combine the slaw, apples, chicken, grapes, yogurt, blue cheese, lemon juice and walnuts. Season with black pepper. Serve the salad over the mixed greens.
