Waldorf Salad - PCOS-Friendly Recipe

Ingredients
- 6 cups packaged broccoli slaw
- 4 cups chopped Granny Smith apple (about 4 small)
- 4 cups chopped or shredded skinless, boneless white breast meat from a rotisserie chicken (or 3/4 cups dark meat per cup)
- 1 cup halved seedless grapes
- 3/4 cup plain nonfat yogurt
- 1/4 cup crumbled blue cheese
- 1/4 cup lemon juice
- 1/4 cup walnuts, chopped
- Freshly ground black pepper
- 8 cups mixed greens
Instructions
- In a large bowl, combine the slaw, apples, chicken, grapes, yogurt, blue cheese, lemon juice and walnuts. Season with black pepper. Serve the salad over the mixed greens.
