Ingredients

  • 1 medium onion
  • 1 tbsp. olive oil
  • 2 clove garlic
  • 4 can chicken broth
  • 1 package frozen chopped kale
  • 1/2 lb. frozen tortellini
  • 1 can white beans
  • 1/4 c. Parmesan cheese

Instructions

  1. Cook onion in oil in large pot over medium high heat until tender. Add garlic; cook 30 seconds. Stir in broth and kale. Bring to boil; reduce heat and simmer 15 minutes.
  2. Add tortellini and cook 10 minutes. Pour beans into pot and heat through. Serve sprinkled with Parmesan cheese.
