Ingredients
- 2 rolls biscuit dough
- 2 tbsp. melted butter
- 1 packet ranch seasoning mix
- 1 rotisserie chicken (or 3 boiled chicken breasts)
- 1/3 c. ranch dressing
- 1/3 c. shredded Mexican cheese
- 1/3 c. fresh salsa, juices drained
- 4 strips bacon, cooked and crumbled
- scallions, diced
Instructions
- Preheat oven to 375 degrees F. Peel apart biscuits and use a knife to cut them into quarters.
- Place in a large resealable bag and top with melted butter and ranch seasoning mix. Seal bag and toss until biscuits are coated; pour onto a greased 3-quart casserole dish.
- Use two forks to shred chicken meat into bite-size pieces. In a mixing bowl, toss shredded chicken and ranch dressing; pour on top of biscuit mixture. Top with shredded cheese, salsa, bacon, and scallions.
- Bake until biscuits are lightly golden and cheese has melted, 20 to 22 minutes. Serve.
