Ingredients
- 2 tablespoons vegetable oil
- 1 onion, diced
- 1 (2 lb) can Boston-style baked beans
- 1 tablespoon mustard
- 1 (14 1/2 oz) can diced tomatoes
- 2 teaspoons brown sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350 °.
- In a large skillet over medium high heat, add the vegetable oil and onions and let the onions sweat down for 1-2 minutes. Add the can of tomatoes, and sauté for another minute. Add the beans, brown sugar and mustard and mix to combine.
- Pour the bean mixture into a 2-quart casserole dish. Bake covered for 15-20 minutes, then uncover the casserole and bake for 15-20 minutes longer.
