Ingredients
- 1 1/2 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. chopped glace pineapple
- 1/2 c. chopped glace cherries
- 2 stick butter
- 1 c. superfine sugar
- 1 egg
- 1 c. chopped, toasted pecans
Instructions
- Sift together flour, baking soda, and salt. Combine pineapple and cherries and toss with 3 tablespoons of the flour mixture.
- Beat butter, sugar, and egg for 5 minutes; beat in remaining flour mixture. Fold in fruit mixture and pecans.
- Divide; shape into four 6-inch by 1 1/2 inch logs. Cover in plastic wrap; chill for 2 hours. Slice logs into 1/4 inch slices; bake on parchment-lined baking sheets at 375 degrees F for 9 minutes.
