To make these easy icebox cookie, you'll need "glace," or candied, cherries and pineapple.

Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. chopped glace pineapple
  • 1/2 c. chopped glace cherries
  • 2 stick butter
  • 1 c. superfine sugar
  • 1 egg
  • 1 c. chopped, toasted pecans

Instructions

  1. Sift together flour, baking soda, and salt. Combine pineapple and cherries and toss with 3 tablespoons of the flour mixture.
  2. Beat butter, sugar, and egg for 5 minutes; beat in remaining flour mixture. Fold in fruit mixture and pecans.
  3. Divide; shape into four 6-inch by 1 1/2 inch logs. Cover in plastic wrap; chill for 2 hours. Slice logs into 1/4 inch slices; bake on parchment-lined baking sheets at 375 degrees F for 9 minutes.
