Ingredients
- 1 lb. gemelli
- 2 tbsp. Extra virgin olive oil
- 1/2 lb. boneless skinless chicken breasts
- kosher salt
- freshly ground black pepper
- 1/2 c. cooked bacon, crumbled
- 1/2 c. ranch dressing
- 2 tbsp. Chopped chives
Instructions
- In a large pot of salted boiling water, cook gemelli according to package directions until al dente. Drain and transfer to large serving bowl.
- Meanwhile, cook chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook until golden and cooked through, about 6 minutes per side. Transfer to a cutting board and chop.
- To bowl, add pasta, chicken, bacon, and dressing and toss until well combined. Season with salt and pepper.
- Garnish with chives.
