Ingredients

  • 1 cup water
  • 1 cup cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup dry vermouth
  • 12 (1/4-inch-thick) slices green tomato
  • 2 garlic cloves, thinly sliced
  • 1 shallot, thinly sliced
  • 2 dill sprigs

Instructions

  1. Combine water, vinegar, sugar, mustard seeds, salt, and crushed red pepper in a saucepan over medium-high. Bring to a boil; stir. Combine vermouth, green tomato slices, garlic, and shallot in a shallow bowl; add dill sprigs. Top with hot vinegar mixture. Refrigerate 4 to 6 hours.
