Recipe by Todd Porter and Diane Cu In just 15 minutes, this great stir-fry gives you tender bok choy and decadent shiitake mushrooms in a flavorful fish sauce.

Ingredients

  • 1 lb. baby bok choy
  • 1 tbsp. grapeseed or canola oil (or other high flashpoint oil)
  • 2 tbsp. sliced shallots
  • 3 clove garlic
  • 1/2 lb. shiitake mushrooms
  • 1 tbsp. fish sauce
  • 1 tsp. rice vinegar
  • 1/2 tsp. sugar
  • Fresh cracked black pepper

Instructions

  1. Trim ends of bok choy. Wash, pat dry with paper towels, and then set aside.
  2. Heat a large skillet or wok over medium-high heat. Add oil, and then stir in garlic and shallots. Cook for 1-2 minutes, or until soft, and then stir in shiitake mushrooms. Stirring occasionally, cook the mushrooms for 2-3 minutes or until they are browned and release some of their water.
  3. Stir in bok choy. Cook for 1-2 minutes, or until bok choy is just wilted.
