Ingredients
- 4 slices bacon, chopped into 1" pieces
- 1/2 red onion, chopped
- 1 lb. ground beef
- kosher salt
- Freshly ground black pepper
- 1 c. barbecue sauce
- 1 bag Tortilla chips
- 3 c. shredded Cheddar
- 1/4 c. Sliced scallions
Instructions
- Preheat the oven to 350 degrees F.
- Heat a large skillet over medium. Add the bacon and sauté until crisp. Drain bacon pieces on paper towels but reserve about 2 tablespoons bacon fat in pan. Add onion and sauté until soft. Stir in ground beef, breaking the meat up with a wooden spoon. Season with salt and pepper to taste. Cook, stirring often, until the beef is cooked through. Add barbecue sauce to the pan and bring mixture to a simmer. Turn off the heat.
- Spread the chips out onto a large baking sheet. Pour the BBQ beef mixture on top of the chips, then sprinkle evenly with cheese. Bake until the cheese is melted and everything is warmed through, about 8 to 10 minutes. Garnish nachos with scallions and serve warm.
