Ingredients

  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1-1/2 teaspoons olive oil
  • 1-1/2 cups diced fresh tomatoes
  • 1/2 cup tomato sauce
  • 4-1/2 teaspoons minced fresh dill or 1 teaspoon dill weed
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/2 pound cooked medium shrimp, peeled and deveined
  • 1/2 cup crumbled feta cheese
  • 1/2 cup minced fresh parsley

Instructions

  1. In a large saucepan, saute onion and garlic in oil for 5 minutes. Stir in the tomatoes, tomato sauce, dill, mustard, honey and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add the shrimp, cheese and parsley; simmer 5 minutes longer.
