Ingredients

  • 2 slices bacon
  • 2 slices cheddar
  • 1/2 avocado, thinly sliced
  • 1 tbsp. butter
  • kosher salt
  • Freshly ground black pepper

Instructions

  1. Fry bacon over medium heat until crispy. Drain bacon and wipe skillet clean.
  2. Using a small glass or biscuit cutter, cut a hole into one slice of bread.
  3. Return skillet to medium heat. Add butter and toast both slices of bread.
  4. Flip when golden and crack the egg into the hole. Season to taste with salt and pepper. Add avocado slices, cheese and bacon to the other slice of bread. Cover the skillet and cook until the egg whites are cooked through and the cheese is melted, about 3 minutes.
