Ingredients
- 8 oz. green beans
- 2 tbsp. water
- 2 tsp. olive oil
- 1 small onion
- 1 lb. spicy Italian sausage
- 1/2 c. chopped roasted red peppers
- 2 clove garlic
- 1/4 tsp. salt
- 1 tube cooked polenta
- 1/3 c. lower-sodium chicken broth
- 1/2 c. grated Parmesan
Instructions
- Preheat oven to 425 degrees F. Microwave green beans and water in covered bowl on high 2 minutes or until bright green; drain.
- Meanwhile, heat olive oil in 12-inch skillet on medium-high. Add onion and Italian sausage; cook 6 minutes, stirring and breaking up sausage. Stir in beans, chopped roasted red peppers, garlic, and salt. Cook 2 minutes.
- Layer cooked polenta and sausage mixture in rows in 8-inch-square baking dish. Top with chicken broth and grated Parmesan. Bake 15 minutes or until hot. Top with chopped parsley.
