Ingredients

  • 8 oz. green beans
  • 2 tbsp. water
  • 2 tsp. olive oil
  • 1 small onion
  • 1 lb. spicy Italian sausage
  • 1/2 c. chopped roasted red peppers
  • 2 clove garlic
  • 1/4 tsp. salt
  • 1 tube cooked polenta
  • 1/3 c. lower-sodium chicken broth
  • 1/2 c. grated Parmesan

Instructions

  1. Preheat oven to 425 degrees F. Microwave green beans and water in covered bowl on high 2 minutes or until bright green; drain.
  2. Meanwhile, heat olive oil in 12-inch skillet on medium-high. Add onion and Italian sausage; cook 6 minutes, stirring and breaking up sausage. Stir in beans, chopped roasted red peppers, garlic, and salt. Cook 2 minutes.
  3. Layer cooked polenta and sausage mixture in rows in 8-inch-square baking dish. Top with chicken broth and grated Parmesan. Bake 15 minutes or until hot. Top with chopped parsley.
