A French classic, steak au poivre is a simple dish of perfectly-cooked beef seasoned with lots of black pepper. This recipe tweaks the formula slightly by adding coriander and fennel seeds to the mix. This recipe is a variation on our Steak with Argentine
Ingredients
- 2 tbsp. crushed black peppercorns
- 1 tbsp. coriander seeds
- 1 tsp. fennel seeds
- 1 tsp. kosher salt
- 4 New York beef strip steaks
Instructions
- In mortar with pestle, or with heavy skillet, crush peppercorns, coriander seeds, and fennel seeds until coarsely ground. Stir in kosher salt.
- Sprinkle mixture all over steaks; pat into meat. Immediately place on grill; cook 7 to 8 minutes for medium-rare or until desired doneness, turning over every 2 to 3 minutes. Transfer to wire rack. Let stand 5 minutes. Serve.
