Ingredients
- 2 cups Italian breadcrumbs
- 1/2 cup high-quality olive oil
- 1 large white onion, sliced thick long-wise
- 4 dried bay leaves
- 3 large boneless chicken breasts, cut into strips
- 6 oz asiago cheese, cut into 2-inch cubes (or any good Italian cheese)
Instructions
- Preheat oven to 350 °F. Spray baking pan lightly with cooking spray. Wrap cheese cubes in chicken and secure with a toothpick. Dip into olive oil and roll in breadcrumbs. Place chicken in bottom of the baking pan. Top with bay leaves and sliced onions. Bake for 15 to 20 minutes until chicken is done and cheese is melting. Breadcrumbs should be golden brown.
