Instructions

  1. Line a large rimmed baking sheet (11 1/2- by 16 1/2 inches) with nonstick foil and arrange 48 unsalted saltine crackers in a single layer over the bottom of the pan. Melt 3/4 cup (1 1/2 sticks) unsalted butter and 1 1/2 cups packed light brown sugar in a medium pot over low heat. Increase the heat to medium and bring to a boil. Pour the sugar mixture evenly over the crackers, then bake at 350 degrees F until deep golden brown, 12 to 15 minutes.

  2. Immediately scatter chocolate chips in an even layer on top; let sit for 2 minutes, then spread it to cover the caramel. While the chocolate is warm, scatter desired candies (such as crushed Jolly Ranchers or Pop Rocks; chopped Snickers, Twix, Milky Way, or Kit Kat bars) over the top and let set. Cut into pieces before serving.

Why this Candy Bark works for PCOS

Lunch is where most PCOS meal plans either succeed or collapse. A meal like this Candy Bark that combines adequate protein, fibre-rich carbs, and fat keeps blood sugar stable for the rest of the workday and reduces the late-afternoon energy crash that drives sugar cravings around 3-4pm.
