Ingredients
- 1 trimmed beef tenderloin
- 1 tbsp. oil
- 1/4 c. brown sugar
- 3 tbsp. ground coffee
- 1/2 tsp. cayenne pepper
- 2 tsp. smoked paprika
- 2 tsp. garlic powder
- Sweet Pepper Sauce
Instructions
- On very large sheet plastic wrap, brush tenderloin with oil. In medium bowl, combine brown sugar, coffee, cayenne, paprika, garlic powder, 2 1/2 teaspoon salt and 1 teaspoon black pepper; rub all over beef, patting to adhere. Wrap tightly and refrigerate at least 1 hour or up to 4 hours.
- Preheat oven to 450 degrees F. Remove beef from plastic and place on rack in roasting pan. Pour 4 cups water into bottom of pan. Roast 45 to 55 minutes or until desired doneness (145 degrees F for medium-rare). Let stand at least 10 minutes before serving. Serve beef thinly sliced with Sweet Pepper Sauce.
